2019 K1 Cabernet Sauvignon

By K1

Adelaide Hills

Story: Our Cabernet Sauvignon is from the front hill of the vineyard on either side of the tree-lined driveway. This variety is always of very consistent and exceptional quality at K1, generating wines of pure and generous varietal expression with the best vintages seeming to last forever for those who like a classic, mature, Cabernet Sauvignon.

Vintage: The 2019 growing season started with mild weather and below average rainfall. Some late spring rain provided a bit of relief from the dry conditions. A heatwave in January was luckily too early in the ripening cycle to cause any damage to the fruit. This was followed by a very mild and dry finish to the vintage, allowing good hang time and flavour development to the smaller than average crop.

Nose: This wine offers restrained cool climate Cabernet aromas of cassis, blackberries and spice.

Palate: The palate is structured and elegant, medium to full-bodied with blackberries, cassis and chocolate accented by flashes of red berries and spice. It is complemented by supple fine tannins and a touch of mint on the long finish.

Food Pairings: Try the K1 Cabernet Sauvignon with a herb crusted lamb rack, roasted root vegetables and a cabernet and juniper berry reduction.

Oak Maturation: 30% new French oak for 18 months.

Cellaring: Drink now or to 2039
