Story: This Cabernet Sauvignon brings together the best of both the Adelaide Hills and McLaren Vale wine regions. The rich, full-bodied structure of McLaren Vale's warm climate combines perfectly with the elegance and bright acidity from the cooler Adelaide Hills. This unique blend results in a wine with deep fruit flavours, balanced tannins, and a smooth, refined finish.
Vintage: 2021 will be one for the record books in more than one way but as far as vineyards across South Australia are concerned it was near perfect. Higher than average rainfall over winter allowed vines to produce good canopy and the cool – dry summer gave us beautiful even ripening conditions. This slow ripening allows great flavour development and retention of natural acidity.
Nose: This Cabernet Sauvignon reveals enticing aromas of blackcurrant, violets, and thyme, with subtle hints of bergamot and vanilla adding elegance to the bouquet.
Palate: On the palate, flavours of mulberry and blackcurrant lead, followed by notes of grilled fig and fennel seed. The wine showcases a beautiful framework of fruit, supported by bright acidity and fine-grained French oak tannins, delivering a well-balanced and refined experience.
Pairing: Enjoy this elegant Cabernet Sauvignon with a classic herb crusted lamb rack, accompanied by roasted root vegetables. The wine's bright acidity and structured tannins enhance the savoury flavours of the lamb.
