Story: Celebrating the special significance of the K1 vineyard to the Adelaide Hills as the first commercial planting of Sauvignon Blanc. We seek to showcase our site potential, through a fusion of tradition and innovation in winemaking that started around 1968 by iconic USA winemaker Robert Mondavi.
We use parcels of fruit from the front and back hill of K1 that show exceptional texture and fruit weight, ferment them in 2nd year French barriques for 10 months to create complexity and push partial malolactic fermentation for richness. This round and textural example delivers refreshing acidity and vibrancy while continuing to challenge what can be achieved from great Sauvignon Blanc fruit.
Vintage: The 2023 vintage was very cool and very even in temperature, so we were able to harvest each variety in its perfect window of premium ripeness for the intended wine styles. This was the third cool year in a row and the fruit flavours across the board were exceptional.
Nose: This Fume Blanc offers a captivating nose with aromas of green papaya and lemon verbena, inviting you into a world of freshness and zest.
Palate: On the palate, it showcases vibrant flavours of tangerine and guava, complemented by complex spice notes that add depth and intrigue to the wine.
Pairing: Enjoy this Fume Blanc with a charcuterie board of artisanal cheeses, cured meats, olives and crusty sourdough.
