Vintage: 2021 will be one for the record books in more than one way but as far as vineyards across South Australia are concerned it was near perfect. Higher than average rainfall over winter allowed vines to produce good canopy and the cool – dry summer gave us beautiful even ripening conditions. This slow ripening allows great flavour development and retention of natural acidity.
Nose: The GMH Shiraz Cabernet Sauvignon 2021 gives lifted aromas of boysenberry, black plum and subtle cedar hinting at the wine's rich and robust character.
Palate: On the palate, it delivers a full-bodied wine with flavours of juicy plum, dark cherry, slight pepper, and subtle mint. Textured by soft tannins that provide structure and balance, the wine culminates in a long, satisfying finish.
Food Pairings: This versatile blend pairs wonderfully with a hearty beef stew simmered with root vegetables and aromatic herbs. The wine's bold fruit flavours and nuanced spice notes complement the savory richness of the stew, while its soft tannins and long finish enhance the overall pairing.
